Great as a Meal or Even a Kids Snack


While it's usually not a good idea to encourage kids to play with their food, there are some meals that just lend themselves to having fun while dining. Mini sandwiches, great for lunch or even a kids snack offer kids a chance to be in charge of what they want, while behind the scenes, mom and dad can offer up some healthy options. Include choices like whole wheat bread or crackers, cheese, cucumbers and avocado slices to add some variety. To make the dish even more appealing, use cookie cutters to create shapes out of the bread. Select a couple of options from each list and create a smorgasbord that you can all pick from.

    Bread ideas:
  • Whole wheat bread
  • Whole wheat crackers
  • Romaine or Boston bibb lettuce leaves
  • Whole wheat tortillas
  • Banana or corn bread
  • Bagel
  • Pita pocket

    Spread Ideas:
  • Dijon mustard
  • Hummus
  • Cashew or almond butter and honey
  • Apple butter
  • Cream cheese, plain or flavored

    Filling Ideas:
  • Thinly sliced cooked ham, turkey or chicken
  • Tuna salad
  • Grilled veggies
  • Olives
  • Roasted pepper
  • Basil
  • Cheese in different varieties -- Swiss, American and cheddar, sure but how about feta or blue?
  • Smoked salmon
